Haji Mohd Zuki Haji Rahman is involved in the tapioca and glutinous rice tapai making enterprise at Kampung Terat Batu. Glutinous rice tapai is one of the favourite traditional foods for people in the east coast. The main ingredients for making tapai are glutinous rice, yeast and a little sugar. The glutinous rice has to be steamed first before it is mixed with yeast and sugar. Later, the mixture is wrapped in a leaf known as tapai leaf and marinated for a few days to produce a sweet-sour taste. One packet of glutinous rice tapai costs RM0.35. Nowadays, he uses banana leaf since tapai leaf is difficult to find. There is a difference in taste for tapai wrapped in tapai leaf and with banana leaf. Normally tapai is eaten as dessert after lunch.
